- Line an 8×8-inch baking dish with parchment paper, leaving overhang for easy lifting.
- Arrange graham crackers in a single layer, upside down, covering the bottom of the pan.
- Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth, or over low heat on the stovetop. Pour melted chocolate over the graham crackers, spreading evenly.
- In a medium bowl, combine thawed coco whip and vanilla protein powder. Stir until smooth and fully incorporated, then gently spread over the chocolate layer.
- Place remaining graham crackers on top of the filling, pressing down lightly to secure.
- Freeze for at least 2 hours, or until firm.
