  6. Prepare chickpeas: drain and rinse, then mix in a bowl with brown sugar, ½ teaspoon chili powder, ¼ teaspoon salt, and pepper.

  7. Heat a skillet over medium heat and add 1 tablespoon olive oil. When shimmering, add seasoned chickpeas.

  8. Cook the chickpeas for about 8 minutes, stirring occasionally until crispy.

  9. Blend dressing: combine drained cannellini beans, 2 tablespoons warm water, 1 tablespoon apple cider vinegar, 1 tablespoon olive oil, ½ teaspoon salt, and ¼ teaspoon pepper in a blender until smooth. Add more water for desired consistency.

  10. Assemble by dividing roasted vegetables between two bowls, topping with crispy chickpeas, and drizzling with dressing.
