Ingredients:
- 1 cup old-fashioned rolled oats
- 1 cup dried figs, chopped
- Β½ cup pepitas (pumpkin seeds)
- Β½ cup tahini
- ΒΌ cup honey
- 2 tbsp ground flaxseed
- 2 tbsp chia seeds
- 1 tsp vanilla extract
- Β½ tsp cinnamon
- ΒΌ tsp sea salt
- Β½ cup chocolate chips (optional)
- 1 tsp coconut oil (optional, for melting chocolate)
The Grind (Instructions):

Prepare the Pan: Line a loaf pan with parchment paper for easy removal.

Combine Ingredients: In a large bowl, mix together rolled oats, chopped figs, pepitas, tahini, honey, ground flaxseed, chia seeds, vanilla, cinnamon, and sea salt until well combined.

Form the Bars: Transfer the mixture to the prepared loaf pan. Press firmly and evenly into the pan. Place in the fridge for a few minutes while you prepare the chocolate topping.

Melt Chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in 30-second intervals until fully melted, stirring in between.

Add Topping: Pour the melted chocolate over the bars, spreading it evenly with the back of a spoon.

Chill and Cut: Return the pan to the fridge for about 30 minutes to harden. Once set, remove from the pan and cut into 8 bars.
